Stella's Stellar Zucchini Walnut Loaf

Preparation time:  20 minutes; cook time:  about 1 hour; makes:  2 loaves (16 servings)

3 cups all-purpose flour
2 tsp ground cinnamon
1¼ tsp baking powder
1 tsp baking soda
1 tsp. salt
1 cup applesauce

2½ cups sugar
3 large eggs, beaten
2 cups grated zucchini
1 cup chopped walnuts
2 tsp vanilla extract

Preheat the oven to 350°F. Lightly grease two loaf pans. In a medium-sized bowl, combine flour, cinnamon, baking powder, baking soda, and salt.  Mix well and set aside. Beat together the applesauce and sugar in a large bowl. Beat in the eggs one at a time.  Stir in the zucchini, walnuts, and vanilla.  Add the dry ingredients and stir until just combined.  Divide the batter between the prepared loaf pans.  Bake one hour, or until a toothpick inserted in the centre comes out clean.  Cool in pans ten minutes, unmold, and cool to room temperature.  Loaves freeze well.
